Directions: To use agar agar threads, use scissors and snip strands into 2-4cm pieces, letting them fall into a small heavy pot. Add 650ml warm water, swish around and let soak for 15 minutes. Put pot over low heat, stirring occasionally till the threads dissolve. Once simmering, keep on heat for about 10 minutes. If small solid pieces remain, use strainer to remove. For agar agar jelly: 1) In 6 cups of water, dissolve the agar agar. Slowly bring to a boil and add 1 cup sugar. Stir until sugar dissolves. 2) Remove from heat and pour 2 cups of the dissolved jelly into a bowl. Add some red colouring, and flavour with rose essence. Stir, and pour into clear glass bowl before refridgerating. 3) Once jelly has set, repeat earlier process with another 2 cups of agar agar jelly soloution, this time colouring with green food colouring and vanilla essence. Pour directly on top of first red layer. 3) Serve from glass bowl. Agar agar is a gelatine-like jelly, derived from a South East Asian seaweed. It is a vegetarian choice for those unable to eat gelatine for dietary or religious reasons. Agar agar is often used as an aid to dieting as it gives the feeling of being full.
